âMiso Ratatouille with Summer Vegetables</p>
<p>â Ingredients (easy to make/about 4 servings)<br />
2 eggplants<br />
1 zucchini<br />
1/2 each paprika (red and yellow)<br />
1/2 of an onion<br />
3 tablespoons olive oil<br />
1 can (400g) whole tomatoes<br />
1 clove garlic<br />
1 bay leaf<br />
1 tablespoon miso<br />
A pinch each of salt and pepper</p>
<p>â How to make<br />
ã1ãCut the onion into 2cm squares and crush the garlic with a knife.<br />
Cut zucchini, bell bell pepper, and eggplant into small pieces.<br />
(* Cut the eggplant last to prevent discoloration.)</p>
<p>ã2ãHeat the garlic and olive oil in a heavy saucepan over low heat.<br />
When fragrant, saute the onions.</p>
<p>ã3ãWhen the onions have softened, add the eggplant, zucchini and paprika.<br />
Sprinkle with salt and pepper and saute for 5-6 minutes.</p>
<p>ã4ãAdd crushed canned whole tomatoes, miso and bay leaves.<br />
Bring to a boil, cover with a lid and simmer for 20-30 minutes, stirring occasionally.<br />
Taste and adjust seasoning with salt and pepper.</p>
