âRolled Sardine with Ume Miso</p>
<p>â Ingredients<br />
3 sardines (opened)<br />
6 slices green perilla<br />
(A) 1 pickled plum (beaten)<br />
(A) 1/2 teaspoon each of miso and mirin<br />
Potato starch, to taste<br />
2 teaspoons salad oil</p>
<p>â How to make</p>
<p>ã1ãCut sardines in half lengthwise and remove fins.<br />
ã2ãMix together (A).<br />
ã3ãSpread (A) on the sardines, top with green perilla, and roll up from the tail.<br />
Fasten with a toothpick.<br />
ã4ãSprinkle a thin layer of potato starch.<br />
ã5ãHeat the salad oil in a frying pan over medium heat.<br />
Cover with a lid and cook for 3 minutes, then turn the fish over and cook for another 2-3 minutes.</p>
