âCarrot Chawan-Mushi:Steamed Egg Custard</p>
<p>Ingredients (Serves 2)ï¼</p>
<p>1/2 carrot<br />
50g chicken<br />
2 shiitake mushrooms<br />
lilly bulbs<br />
Japanese parsley<br />
A 2 egg<br />
A 280ml of fish stock&#8230;about 3 times the amount of eggs<br />
A 1 tsp light soy sauce<br />
A a pinch of salt</p>
<p>Directionsï¼</p>
<p>â Wash the carrot and grate with skin. Cut the chicken into bite-sized pieces. Slice the shiitake mushrooms thinly and cut the Japanese parsley into large chunks. Wash the separated lilly bulbs.<br />
â¡Mix the egg stock mixture(A) and strain. Add the grated carrot, and mix well.<br />
â»Don’t froth when beating the egg because it can be the cause of spongy chawan-mushi.<br />
â¢Place the chicken , the shiitake mushrooms,the lilly bulbs in serving cups and pour â¡ until 80% full, and place the Japanese parsley top of them.Cover with aluminium foil.<br />
â£Set a steamer on a pre-heated pot and place the cups prepared in â¢, and cover. Steam over a low heat for about 20 min.</p>
