1/2 carrot
50g chicken
2 shiitake mushrooms
lilly bulbs
Japanese parsley
A 2 egg
A 280ml of fish stock…about 3 times the amount of eggs
A 1 tsp light soy sauce
A a pinch of salt
Directions:
①Wash the carrot and grate with skin. Cut the chicken into bite-sized pieces. Slice the shiitake mushrooms thinly and cut the Japanese parsley into large chunks. Wash the separated lilly bulbs.
②Mix the egg stock mixture(A) and strain. Add the grated carrot, and mix well.
※Don’t froth when beating the egg because it can be the cause of spongy chawan-mushi.
③Place the chicken , the shiitake mushrooms,the lilly bulbs in serving cups and pour ② until 80% full, and place the Japanese parsley top of them.Cover with aluminium foil.
④Set a steamer on a pre-heated pot and place the cups prepared in ③, and cover. Steam over a low heat for about 20 min.
