<p>âSamgyetang with Salted Yeast Rice</p>
<p>â Ingredients (for 2 to 3 persons)<br />
5 to 6 chicken wings (300g)<br />
1 1/2 tbsp shio koji<br />
100g lotus root<br />
1 long green onion<br />
1 clove each of garlic and ginger<br />
(A) 1 tablespoon each pine nuts and wolfberries (if available)<br />
(A)3 tablespoons glutinous rice (or rice if not available)<br />
Pepper, to taste</p>
<p>â How to make<br />
ã1ã Rinse the chicken wings, wipe dry, and cut along the bone.<br />
Put them in a zipper storage bag, add salted koji, and leave in the refrigerator overnight.</p>
<p>ã2ã Cut green onions into 5cm lengths including the green part, cut ginger into thin slices with the skin.<br />
Cut the garlic in half horizontally.</p>
<p>ã3ã Put 1, 2, (A), and 750 ml of water in a pot, shift the lid slightly, and heat over medium heat.<br />
When it comes to a boil, remove the scum.<br />
Put the lid back on and simmer over low heat for 30 minutes.</p>
<p>ã4ãAdd grated lotus root and simmer for another 5 to 6 minutes.<br />
Season to taste with pepper and salt (as needed).</p>
