 1/2 tsp Doubanjiang<br />
 1 tsp minced ginger<br />
 1 tsp minced garlic<br />
 1 tbsp Shaoxing wine<br />
 1 tbsp minced white leek<br />
 180 ml (6 oz) chicken bone soup<br />
 1 tbsp soy sauce<br />
 2 tsp Tian Mian Jiang<br />
 1 tsp sugar<br />
 1/2 tbsp Ra Yu<br />
 some Szechuan pepper powder</p>
<p>Zha Jiang(for 4 servings)<br />
 400 g (13.3 oz) ground pork<br />
 1 tbsp salad oil<br />
 1 tbsp Shaoxing wine<br />
 1 tbsp soy sauce<br />
 2 tbsp Tian Mian Jiang</p>
<p>Home-made Tian Mian Jiang(120g(4 oz))<br />
 60 g (2 oz) red miso<br />
 60 ml (2 oz) water<br />
 40 g (1.3 oz) sugar<br />
 2 tbsp Shaoxing wine<br />
 1 tsp sesame oil</p>
<p>Chicken bone soup<br />
 1 chicken bone<br />
 1200 ml (1.3 qt) water<br />
