【Ingredients】For about 20 sheets
75g unsalted butter
50g sugar
15g milk
25g pistachios (for powder)
※You can also use store-bought pistachio powder.
100g cake flour
50g pistachios
【Preparation】
・Bring the butter and milk to room temperature (about 20°C).
・While the dough is resting in the freezer, preheat the oven to 170°C.
【How to make】
①Grind the whole pistachios into a powder in a food processor.
②Add the butter and sugar and blend until smooth.
③Add the milk little by little, mixing thoroughly each time. When all the ingredients are mixed, add the pistachio powder from ① and mix.
④Add the pistachios (whole) and mix thoroughly.
⑤Sift in the flour at a time. At first, mix as if you were folding, and when it becomes a big ball, press it to the bottom of the bowl to gather the dough.
⑥Once the dough is evenly mixed, mix until smooth.
⑦Wrap the dough in plastic wrap, spread it out to make it easier to chill, and let it rest in the refrigerator for 1 hour.
⑧Shape the chilled dough. Break up the dough and knead it together.
The dough tends to be sticky, so roll it out quickly with flour.
⑨After the dough has come together to a certain extent, beat it a little on a table to remove the air from the dough and form it into a 20cm cylinder. Wrap in plastic wrap and chill in the freezer for 30 minutes to harden.
※If it has been in the freezer for a long time, refrigerate it and thaw it before cutting.
⑩After the oven has finished preheating, cut the dough into 1cm pieces. After cutting, roll the whole thing to form a shape.
⑪Place on a silpat or baking paper and bake at 170℃ for 15 to 17 minutes.
☆After baking, remove the baking sheet and allow to cool before serving.
