[Chicken soup] (2 servings)<br />
1 piece of chicken<br />
Kelp 10g<br />
600ml water<br />
100ml cooking sake (preferably refined sake)<br />
Light soy sauce 30ml (2 tablespoons)</p>
<p>[Yuzu miso ponzu soup] (1 serving)<br />
About 300ml of chicken soup<br />
White miso 20g<br />
Soy sauce 1 tablespoon<br />
Vinegar 1 tablespoon<br />
Yuzu pepper 1~2g (optional)</p>
<p>I think this is the perfect balance of chicken stock, miso, vinegar, and yuzu pepper.</p>
<p>Vinegar is grain vinegar<br />
If you have ponzu sauce, you can use 2 tablespoons of ponzu sauce!</p>
<p>Feel free to add more vinegar or more miso to suit your taste!</p>
<p>If you&#8217;re going to use all of the soup, I think it&#8217;s a good idea to add the miso to the chicken soup and let it dissolve.</p>
