Korean seaweed – 5–6 sheets<br />
(Chicken Tenderloin Seasoning)<br />
Salt – to taste<br />
Sugar – to taste<br />
White pepper – to taste<br />
Sake – 1 tbsp (approx. 15ml)<br />
(Namul Sauce)<br />
Sesame oil – 1 1/2 tbsp (approx. 22.5ml)<br />
Lemon juice – 2 tsp (approx. 10ml)<br />
Grated garlic – 1 tsp (approx. 5g) Adjust to taste<br />
Coarsely ground black pepper – 1/3 tsp (approx. 1g)<br />
ãHow to makeã<br />
â Cut the pea shoots and kaiware into 3–4 cm pieces and place them in a bowl.<br />
â¡ Prepare the chicken tenderloins, sprinkle with salt, sugar, and white pepper, and let them sit for about 2 minutes to season.<br />
⢠Sprinkle with sake, then microwave at 600W for 2 minutes.<br />
⣠Let them cool slightly, then shred into bite-sized pieces.<br />
⤠In a bowl, mix the namul sauce, then add the pea shoots, kaiware, and chicken, and toss to coat.<br />
⥠Tear the Korean seaweed into pieces, add to the bowl, and mix lightly.<br />
