🧂 Ingredients (2 servings)
For the beef marinade:
200 g thinly sliced beef
1 tbsp sake
1 tbsp mirin
1 tbsp soy sauce
1 tsp sugar
1 tsp ginger paste
For the soba broth:
600 ml water
1 tbsp sake
2 tbsp mirin
3 tbsp soy sauce
1 tsp salt
1 tsp dashi powder
1 tsp sugar
Other ingredients:
2 servings soba noodles (dried or fresh)
Tempura bits (tenkasu), for topping
2 tbsp green onions, finely chopped
A pinch of chili powder (shichimi or ichimi)
🍳 Instructions
1. Marinate the beef
In a bowl, combine beef slices with sake, mirin, soy sauce, sugar, and ginger paste. Mix well and let marinate for at least 1 hour.
2. Prepare the broth
In a pot, bring water, sake, mirin, soy sauce, salt, dashi powder, and sugar to a gentle boil. Once combined, remove from heat and set aside.
3. Cook the beef
In a frying pan, cook the marinated beef over medium heat until tender and cooked through. Set aside.
4. Cook the soba
Boil soba noodles according to package instructions. Drain well and divide into bowls.
5. Assemble
Pour hot broth over the soba noodles. Top with cooked beef, tempura bits, green onions, and a sprinkle of chili powder.
