Beef and Udon(Ingredients)</p>
<p>Sliced beef belly – 200 g<br />
Udon noodles (pre-cooked) – 2 packs<br />
Green onion – ½ stalk<br />

Sugar – 1 tsp (about 3 g)<br />
Sake – 2 tsp (about 10 ml)<br />
ï¼For the udon brothï¼<br />
Water – 550 ml<br />
Mirin – 3 tbsp (about 45 ml)<br />
Sake – 1 tbsp (about 15 ml)<br />
Soy sauce – 3½ tbsp (about 52 ml)<br />
Sugar – 1 tbsp (about 10 g)<br />
Dashi pack – 1 pack<br />
Julienned ginger – about 25 g<br />
ãHow to makeã<br />
â Cut the beef into bite-sized pieces.<br />
â¡ Mix the beef with sugar and sake, and let it sit for about 10 minutes to tenderize the meat.<br />
⢠Julienne the ginger.<br />
⣠Slice the green onion diagonally into thin pieces for garnish.<br />
⤠In a pot, combine all the broth ingredients and the dashi pack. Bring to a boil, then reduce to low heat and simmer for about 2 minutes.<br />
⥠After 2 minutes, remove the dashi pack. Keep the heat low and add the beef.<br />
⦠Once the beef is cooked, bring it to a brief boil, skim off any foam, then reduce the heat again and add the ginger.<br />
â§ Simmer for another 2 minutes — the beef udon broth is ready.<br />
⨠If using pre-cooked udon noodles, loosen them slightly and heat in a 500W microwave for about 2 minutes.<br />

⪠Gently loosen the noodles, top with the cooked beef, and garnish with the sliced green onion.<br />
