Hello, I’m Yukari, a cooking researcher.
This time I’ll be showing you how to make “Minestrone”. It’s a hearty soup packed with plenty of vegetables and umami! The sourness and sweetness of tomatoes are exquisite, making it a great recipe that will warm you up. It’s full of nutrition and extremely satisfying! It’s perfect for the cold season, as well as for breakfast or a light meal. Please give it a try!
【Instructions】
1. Cut the potato into 1cm cubes and soak in water for about 10 minutes.
2. Cut the carrot into 8mm cubes, the onion into 1cm cubes, and roughly chop the cabbage. Slice the bacon into 5mm strips.
3. Heat olive oil in a frying pan and sauté the bacon. Once browned, add the potato, carrot, and onion.
4. Stir briefly, then add the garlic and mix. Add the cabbage and cooking sake, cover with a lid, and steam over medium-low heat for 2 minutes.
5. Remove the lid to let the alcohol evaporate, then add the canned tomatoes and cook until the moisture reduces.
6. Add ketchup and continue cooking to reduce moisture slightly. Pour in water, consomme, and sugar. Once it reaches a boil, cover with a lid and simmer on low heat for 5 minutes. Enjoy!
