🍜 Ingredients
For the Beef Topping
200g thinly sliced beef (such as shabu-shabu cut)
½ medium onion, thinly sliced
2 tsp dashi powder
3 tbsp mirin
3 tbsp sake
5 tbsp soy sauce
2 tsp garlic paste
2 tsp ginger paste
50ml water
3 tbsp sugar
1 tsp sesame seeds
For the Udon Broth
500ml water
2 packets udon base powder (adjust to taste)
For Serving
1 servings udon noodles (fresh or frozen)
1 egg yolks
2 tbsp chopped green onions
Extra spice blend (e.g., shichimi togarashi)
🥣 Instructions
Cook the Beef Topping:
In a pot, combine beef, onions, dashi powder, mirin, sake, soy sauce, garlic paste, ginger paste, and water.
Bring to a gentle simmer over medium heat, stirring occasionally.
Add sugar and sesame seeds, then cook until the beef is tender and onions are soft. Set aside.
Prepare the Udon Broth:
Using the same pot (leave a bit of the beef flavor in), add water and udon base powder.
Bring to a simmer and keep warm.
Cook the Udon Noodles:
Boil udon noodles according to package instructions.
Drain well and divide into serving bowls.
Assemble:
Pour a little broth over the noodles.
Top with the simmered beef and onions.
Add an egg yolk in the center, sprinkle with green onions, and dust with extra spice blend if desired.
