1 tsp Rice vinegar
1 tsp sugar
★A little salt and pepper
★1 tsp Soy sauce
★3 tbsp Mayonnaise
【Directions】
①Thinly slice the cucumber, put it in a plastic bag, add salt, and lightly knead it. Squeeze out the excess water when adding it later.
②Wash the potatoes well with the skin on, place them in water, and boil them until a bamboo skewer can easily pierce through. While hot, remove the skins, place the potatoes in a bowl, and mash them with a spoon.
③While the potatoes are still hot, add rice vinegar and sugar, and mix well. Let it cool as is.
④Once the potatoes have cooled, add the seasonings marked with ★ and mix well. Taste and adjust the flavor as needed.
⑤When the potatoes are seasoned, add the cucumber, pickled radish (takuan), and ham, and mix well.
⑥Serve on a plate, garnish with a boiled egg, and it’s ready to eat! ♪
