■Ingredients (for 2 to 3 persons)
5 to 6 chicken wings (300g)
1 1/2 tbsp shio koji
100g lotus root
1 long green onion
1 clove each of garlic and ginger
(A) 1 tablespoon each pine nuts and wolfberries (if available)
(A)3 tablespoons glutinous rice (or rice if not available)
Pepper, to taste
■How to make
【1】 Rinse the chicken wings, wipe dry, and cut along the bone.
Put them in a zipper storage bag, add salted koji, and leave in the refrigerator overnight.
【2】 Cut green onions into 5cm lengths including the green part, cut ginger into thin slices with the skin.
Cut the garlic in half horizontally.
【3】 Put 1, 2, (A), and 750 ml of water in a pot, shift the lid slightly, and heat over medium heat.
When it comes to a boil, remove the scum.
Put the lid back on and simmer over low heat for 30 minutes.
【4】Add grated lotus root and simmer for another 5 to 6 minutes.
Season to taste with pepper and salt (as needed).
