Directions:
Make the soup first, add everything together and bring to a boil. Leave it aside and make the topping. In a small pan, melt butter and throw in the two types of mushrooms. Add in the sake and sauté till they become somewhat limp. Add in some of the soup for flavor. Mircowave the udon as instructed on the type you buy and throw into soup. Bring it to a light boil. Place noodles in a bowl, if you have left over soup, use that for another meal. Too it with the sautéed mushrooms. Add parmesan cheese, egg yolk, and green onions.
