●Shrimp Spring Rolls
【Ingredients】(Makes 4 Rolls)
4 spring roll wrappers
150 g small shrimp (peeled)
5cm Welsh onion
4 shiso leaves
1 Tbsp sake
1/2 Tbsp potato starch
taberu rayu (edible chili oil)
salt
1 Tbsp flour
1 Tbsp water
【Directions】
1. Finely chop the shrimp with a knife, and chop the Welsh onion.
2. In a bowl, combine 1, sake, potato starch, taberu rayu, and salt.
3. Dissolve the flour in the water.
4. Place a shiso leaf on a spring roll wrapper, add 2, and roll up.
5. Add 3 to the edge to seal, then fry in oil at 170℃.
