Bring cream cheese and eggs to room temperature.<br />

Cut the strawberries into quarters and place in a saucepan. Add the sugar and heat while stirring with a spatula.<br />
Heat over a low-medium heat at first, and as you stir, the strawberries will release their water.<br />
After 3 or 4 minutes, when the strawberries can be easily crushed with a spatula, remove from the heat and leave to cool in a large bat.</p>
<p>When the strawberries have cooled completely, preheat the oven to 250â.</p>
<p>Make the dough. Place the cream cheese, eggs and cooled strawberries in a food processor and stir.<br />
Once the whole mixture is mixed, scrape around and add the rice flour and stir further. Mix firmly and a little longer.<br />
Transfer to a bowl and mix well, adding the cream as you mix.<br />
Pour into a mould and bake in the oven at 230â for 30 minutes.</p>
<p>Once baked, leave to cool. When completely cool, refrigerate for 1 day.</p>
