Make the dough:
In a bowl, combine warm water, sugar, salt, flour and yeast. Mix until a soft dough forms, add softened butter in between, then knead for about 8–10 minutes until smooth and elastic.
Let it rise:
Place the dough in a lightly oiled bowl, cover, and let it rise for about 1 hour or until doubled in size.
Prepare the filling:
In a small bowl, mix brown sugar, cinnamon and butter.
Roll and fill:
Roll out the dough into a rectangle. Spread cinnamon paste evenly.
Shape the rolls:
Roll the dough tightly from the long side, then cut into 6–8 even pieces. Place them in a greased baking dish. Cover and let rest for another 30-40 minutes.
Bake:
Brush with cream or milk then bake in a preheated oven at 200°C for 15-20 minutes, or until golden brown.
Make the icing:
Beat cream cheese, butter, powdered sugar, and vanilla until smooth and creamy.
Finish:
Spread the icing over warm rolls so it melts slightly into the layers. Serve and enjoy while still warm!
