【Ingredients】 For one 15cm diameter, size 5
200g cream cheese
70g sugar
10g matcha powder
3g corn starch
2 eggs
1 egg yolk
200g heavy cream
50g amanatto
【Preparation】
・Preheat the oven to 250°C before making the dough.
・Make sure the cream cheese is soft enough to slip through your fingers.
・Mix the egg and egg yolk together.
【How to make】
①Prepare a piece of baking paper slightly larger than the size of the mold. Roll it up to make wrinkles. Soak it in water, squeeze it, and lay it on the mold.
②Mix matcha, cornstarch, and sugar.
③Cream cheese to a smooth consistency, add ① and mix from the center.
④Gradually add the egg whites in three parts.
⑤Add the cream a little at a time while mixing. Strain the dough through a fine mesh, pour it into a mold and drop it from a height of 10cm several times to remove air from the dough.
⑥Add in the sweet beans, avoiding the center. Bake at 250℃ for 20 minutes.
Remove from heat and refrigerate until cool enough to handle.
