Let’s make Nagasaki Chanpon today. It is one of Japanese noodle dishes and was created in Nagasaki in the Meiji era. Under the national isolation policy in the Edo period, foreign trade was permitted only in Nagasaki. That’s why an exotic food culture has developed in Nagasaki.
“Chanpon” means “mixing various things” We use pork, prawn, kamaboko(made of fish) and various vegetables as the ingredients. The soup stock we are making( from chicken bones and prawn heads) is excellent! You can use pork stock instead, if you like.
