●Shio Koji Soup with Spring Vegetables
■Ingredients
1 leaf of spring cabbage (100g)
1/2 fresh onion
2 asparagus
1 slice of bacon
2 teaspoons olive oil
1 1/2 tablespoons salted malt
A pinch of pepper
■How to make
【1】Cut cabbage into 1.5 cm pieces, onion into 1.5 cm cubes, and cabbage into 1.5 cm cubes.
Peel 1/3 of the asparagus from the root and cut into 3 cm pieces.
Cut bacon into 1 cm pieces.
【2】Heat olive oil in a pan over medium heat and saute bacon and onion.
【3】When the onions soften, add the cabbage and asparagus and saute briefly.
Add 500 ml of water and salted malt and turn the heat to high.
【4】When it comes to a boil, reduce the heat to medium and cook for 1 to 2 minutes.
Serve in bowls and season with pepper to taste.
