【Preparation】
・Prepare a paper pattern and lay it on the mold.
・Remove the eggs from the water and preheat the oven to 170°C.
【How to make】
①Mix the dried fruit and yogurt together and let it rest overnight in the refrigerator.
※The water from the yogurt will soften the dried fruit.
②Crack the eggs into a bowl and beat them lightly with a hand mixer. Add sugar and whisk with a hand mixer until the mixture reaches about 40°C.
≪Approximate temperature of the water used for hot water bath
For a stainless steel bowl→ about 60℃.
In the case of a glass bowl→ about 70℃.
③Remove the bowl from the water bath and whip further. After whipping until you can draw letters and leave a firm mark, whip at a low speed to adjust the texture of the bubbles. Place the oil and fat in the empty water bath and heat until it reaches about 60℃.
④Sift in the flour in two batches. Add half of the flour and mix it up from the bottom. When the flour is gone, sift in the remaining flour and mix in the same way.
⑤When all the flour is mixed in, add the rest of the flour and mix until the dough becomes glossy.
⑥Add some of the dough to the melted fat and let it emulsify thoroughly, then add it back to the dough and mix.
⑦Finally, add the dried fruits that have been left overnight and mix until evenly distributed.
※Mix the dried fruit well before adding.
Yogurt is heavy, so be careful not to overmix.
⑧Pour the mixture into a mold and flatten the surface.
Bake at 170℃ for 30 minutes.
⑨After baking, shock the dough several times and remove from the mold immediately. After cooling, let the dough sit in the refrigerator for a day, then cut into pieces the next day.
